Strawberry Compote
I use this strawberry compote as a topping on many dishes. It provides a great balance between sweet and tart. Creme brulee, ice cream, yogurt and Bircher muesli are just some of the foods I use it on.

- Heat Proof Stirring Spoon
- Knife
Ingredients
- 250 g fresh strawberries (you can use any berry or mix or berries)
- 1 tbsp castor sugar
- 2 tbsp balsamic vinegar
- 3 tbsp water
Instructions

- Wash and cut strawberries into small pieces.
- Add strawberries with sugar, vinegar and water into a pot.
- Heat over medium heat for 8-12 minutes stirring occasionally.
- Remove from heat when liquid has reduced into a thick (not too thick) syrup.
- Place into a dish. Careful as this mixture is extremely hot.
- Cool and use on any dish you like.
- Refrigerate and eat within 4 days.
