Charred and Roasted Capsicum

These charred and roasted capsicums are perfect for adding to any dish for extra flavor while being healthy.

Ingredients
  

  • 2 capsicum (peppers)
  • 1 tbsp mixed herbs
  • extra virgin olive oil
  • salt
  • pepper

  • Preheat fan-forced oven to 200º C (390º F).
  • Over a stove top flame, lightly char the skin of the capsicum, careful not to over burn the skin.
  • Cut the capsicum into smaller pieces (approx 4cm x 4cm) and place into a roasting dish with herbs, olive oil, salt and pepper.
  • Mix well in the roasting dish so that herbs and oil cover the pieces well.
  • Roast for approx 15-20 minutes. Keep checking until it's roasted to your liking.
  • Remove from oven, let cool and store in air tight container in the fridge.
  • Eat within 3-5 days.
