Charred and Roasted Capsicum
These charred and roasted capsicums are perfect for adding to any dish for extra flavor while being healthy.

Ingredients
- 2 capsicum (peppers)
- 1 tbsp mixed herbs
- extra virgin olive oil
- salt
- pepper

- Preheat fan-forced oven to 200º C (390º F).
- Over a stove top flame, lightly char the skin of the capsicum, careful not to over burn the skin.
- Cut the capsicum into smaller pieces (approx 4cm x 4cm) and place into a roasting dish with herbs, olive oil, salt and pepper.
- Mix well in the roasting dish so that herbs and oil cover the pieces well.
- Roast for approx 15-20 minutes. Keep checking until it's roasted to your liking.
- Remove from oven, let cool and store in air tight container in the fridge.
- Eat within 3-5 days.
